What are we eating?

As a beginner foodie, I appreciate the restaurants who post their menus online. This way I can do a dictionary search on all the stuff I don't know.
Saturday night's restaurant required a search on:
saba
soubise
lardoon

I didn't eat any of them. But at least I knew what they were.
