Humans have been eating beef tongue since prehistoric times. Growing up we used to eat it boiled. My sister and I would fight over who got the tip; not that it tasted beter than the rest, just that it looked cool.
It's been decades since then, but this past weekend, I indulged in a beef tongue sandwich with carmelized onions, a homemade pierogi, and "marrownaise" on fire-grilled sourdough. Between the tongue and the marrow, I got my daily allowance of fat covered for the next two weeks. But it was totally worth it.
