1 tb Butter; soft
2 tb Bread crumbs; dry
1 1/2 lb Cod or haddock; skinned and boned
1/2 c Light cream and
1 c Heavy cream; combined
2 ts Salt
1 1/2 tb Cornstarch
If you combine the above properly (or, one could argue, according to directions) you will end up with the Norwegian delicacy known as fiskepudding. Fish pudding. According to my Scandinavian cookbook, "To make an authentic Norwegian fish pudding --white, delicate and spongy in consistency-- you should begin with absolutely fresh white fish." Oh, and my mom says you should always serve it with gravy.
Because what else would you do with fresh white fish? Those Vikings sure were health nuts.
